hmm, good question. There really are a lot of things to consider here.
The Alliance
The dodge% from Night Elves is a very good bonus, plus the shadowmeld makes great opportunities for ambushes when you have charge. The +skill into swords and maces for humans is pretty nice, makes you hit more which is good for gaining rage and grabbing aggro. Dwarves stoneform is also very nice for tanking of course. Finally on the alliance you have gnomes, nothing super special to warriors, but the escape artist talents really help out since warriors don't have many ways of getting away from combat.
The Horde
Orcs make for pretty good warriors with their +5 axe skill (same reason as humans), and the 25% resistance to stun and knockout effects make it seem like they are impossible to stun (coming from a NE rogue). The bloodfury talent can go either way, the extra damage is awsome if your not the tank in the group, but really hurts if you are kinda making it useless. Taurens warstomp is just plain great across the board, but the +5% health is nice(i've seen NE warriors get around 10k health, you do the math) and its said in BC tanks are going to go much higher. Trolls regeneration talent seems pretty nice, but i'm not sure it helps a whole bunch. The increased attack speed can help in doing dmg, and I guess get you out of a tight spot if you and your opponent are low on health. Finally we come to the Undead. Will of the Forsaken, best talent in the game imo. It really helps for end game instances where the boss fears everyone (for a tank if you can get out fast its awsome), add this to your beserker rage and your pretty close to immune to fear if you pop stances quick enough. (quick tidbit, if your sapped in beserker stance you can use it to get out of stun) Cannibalize is a pretty nice skill and can take some money off your bill from having to buy foods.
Mostly it all boils down to which face you like the most, I find even if your the best, if you don't like your race you get bored with the game. But if you wana go by stats, on the Alliance, Dwarves and Humans probably make the best tanks statwise (skill forsaken) and on the horde, well, basically anything but Troll is nice statwise.
